Surya denkt daarbij aan zijn thuisland India, een land dat haar gas moet importeren en lang niet zo’n fijnmazig distributienetwerk heeft zoals in Nederland. Dat maakt het gebruik van gas kostbaar.\u003C/p\u003E\r\n\u003Cp\u003ESurya ziet ook al die oververhitte restaurantkeukens voor zich, waar het tijdens een hectische periode in de zomer soms wel meer dan 50 graden kan worden. Hij vindt het bovendien belangrijk te streven naar minder CO\u003Csub\u003E2\u003C/sub\u003E-uitstoot in wereld. “Als we voor deze problemen nu eens een slimme en efficiënte pan ontwikkelen, één die warmte beter vasthoudt; hoeveel gas zouden we hij hiermee wereldwijd kunnen besparen?”\u003C/p\u003E\r\n\u003Ch3\u003E\u003Cb\u003EMetalen kast vol prototypen\u003C/b\u003E\u003C/h3\u003E\r\n\u003Cp\u003EZijn kantoor in hét start-upcentrum van Delft, YESDelft!, is sober en slechts met het hoogst noodzakelijke ingericht. Twee bureaus, stoelen erachter, computers erop. De wanden zijn wit. In een hoek staat een bescheiden metalen kast met erin alle prototypes van de pan die hij samen met zijn compagnon en industrieel ontwerper Wytze de Vries ontwikkelde.\u003C/p\u003E\r\n\u003Cp\u003EEen voor een haalt hij de prototype pannen uit de kast. Ze laten de reis zien die hij en zijn compagnon de afgelopen periode hebben afgelegd. Dat zorgt ervoor dat de pan 50% minder gas nodig heeft. Ook is de pan sneller opgewarmd. Surya: “In een restaurant handig, zeker bij topdrukte.” Hij somt nog meer voordelen op. Door de constructie aan de onderzijde is de pan supersterk. Conventionele koekenpannen hebben de neiging om na verloop van tijd te buigen, waardoor ze wankel op het fornuis staan. Deze blijft dus altijd stabiel, zo verzekert de ondernemer. En de pan is lekker licht, voorzien van een duurzame anti-aanbaklaag en gebouwd om lang mee te gaan. “Met één pan, die je meteen kunt gebruiken op je bestaande gasfornuis, kun je een probleem van vandaag de dag oplossen.”\u003C/p\u003E\r\n\u003Ch3\u003E\u003Cb\u003EOntwikkelen samen met gebruikers\u003C/b\u003E\u003C/h3\u003E\r\n\u003Cp\u003EDe uiteindelijke pan is het resultaat van een continu ontwerpproces, samen met professionele koks. Met zijn compagnon gaat hij hiervoor langs bij vele restauranthouders en chefs om te vragen naar hun behoeftes. “Door die gesprekken raakte ik steeds meer overtuigd van het idee. Zijn studie en de ervaring die hij bij andere startups opdoet om meer te leren over de ‘gekke’ eigenschappen van innovatieve ondernemers, inspireren hem om zelf ook ondernemer te worden.\u003C/p\u003E\r\n\u003Ch3\u003E\u003Cb\u003EDe eerste pannen\u003C/b\u003E\u003C/h3\u003E\r\n\u003Cp\u003EDe inspanningen lijken de eerste vruchten af te werpen. Surya wint prijzen met zijn onderneming. Een Haagse innovatieprijs bijvoorbeeld. De European Space Agency geeft steun. En de allereerste klanten, van sterwaardige restaurants tot hotelketens, dienen zich aan. Over de eerste ervaringen zegt Surya: “Koks moeten eraan wennen, zeker. Normaal zetten ze het vuur vol aan, terwijl bakken met deze pan op een klein vuurtje kan. Maar het zijn professionals. Ze wennen er snel aan en ondervinden het gemak van sneller koken.” Ook het Shell Impact Fund investeert in de jonge onderneming van Surya en Wytze. Hij reageert: “Ik ben daar heel blij mee. Het stelt ons in staat de eerste serie pannen in productie te nemen, om op te schalen.”\u003C/p\u003E\r\n\u003Ch3\u003E\u003Cb\u003EOndernemers blijven altijd bezig\u003C/b\u003E\u003C/h3\u003E\r\n\u003Cp\u003EOndertussen draait de ondernemersgeest van Surya op volle toeren door. Misschien komen er wel \u003Ci\u003Ecostumize\u003C/i\u003E handgrepen voor zijn pannen. Of duurzame constructies om de pan te laten \u003Ci\u003Erefurbishen \u003C/i\u003Ewanneer ze een aantal jaar zijn gebruikt. Natuurlijk kent Surya ook de maatschappelijke discussie in Nederland over aardgasvrije woningen. Daarom denkt hij na over een vergelijkbaar concept voor duurzame warmtebronnen.\u003C/p\u003E\r\n\u003Cp\u003EDat is toekomstmuziek. Slechts 15% van de wereldbevolking kookt elektrisch, en daarom is er nog minstens een halve wereld te winnen voor deze warmte- en gasbesparende koekenpan, denkt Syrya. Surya: \"What if we developed a smart and efficient pan for these problems, one that retains heat better. Two desks, chairs behind them, computers on them. The walls are white. In one corner is a modest metal cabinet with all the prototypes of the pan that he developed together with his partner and industrial designer Wytze de Vries.\u003C/span\u003E\u003Cbr\u003E\r\n\u003C/p\u003E\r\n\u003Cp\u003EOne by one, he takes the prototypes out of the cupboard. They show the journey he and his partner have taken in developing the Effium pan. This ensures that the pan needs 50% less gas. The pan heats up faster too. Surya: \"Handy in a restaurant, especially when it's busy.\"\u003C/p\u003E\r\n\u003Cp\u003EHe lists even more advantages. Due to the construction at the bottom, the pan is super strong. Conventional skillets tend to bend over time, making them shaky on the stove. The Effium pan will always remain stable, the entrepreneur assures. And the pan is nice and light, has a durable non-stick coating and is built to last. \"This one pan, for use on any conventional gas stove, can solve the heat loosing problems of today.”\u003Cbr\u003E\r\n\u003C/p\u003E\r\n\u003Ch3\u003E\u003Cb\u003EAerospace technology\u003C/b\u003E\u003C/h3\u003E\r\n\u003Cp\u003EThe final pan is the result of a continuous design process, together with professional chefs. Together with his partner, he has visited many restaurateurs and chefs to ask about their needs. \"Thanks to these conversations, I became more and more convinced that our idea would work. We have kept in the designs what chefs like about the pan, and changed what they experience as less pleasant.\"\u003C/p\u003E\r\n\u003Cp\u003ESurya says he finds inspiration in aerospace technology, visible in the ribbed underside of the pan. And he  likes to observe the world around him, identifying problems and finding links for a smart solution from a young age. He admits that, as a little boy in India, he had no idea what 'entrepreneurship' entailed. The \"crazy\" characteristics of innovative entrepreneurs he learned during his studies and working for other start-ups, inspiring him to become an entrepreneur himself.\u003C/p\u003E\r\n\u003Ch3\u003E\u003Cb\u003EStar-worthy restaurants\u003C/b\u003E\u003C/h3\u003E\r\n\u003Cp\u003ESince its launch, the Effium pan has caught the eye of others. The city of The Hague gave it an innovation prize, the European Space Agency provided support. Among the very first customers are star-worthy restaurants and known hotel chains.\u003C/p\u003E\r\n\u003Cp\u003ESurya: \"Chefs have to get used to it, for sure. Normally they turn on the heat to its full capacity, while cooking with this pan goes perfect on a small fire. But the chefs are professionals, so they get used to it quickly.\"\u003C/p\u003E\r\n\u003Cp\u003EAbout the Shell Impact Fund’s decision to support the young company, Surya says: \"I'm very happy with it. It enables us to put the first series of pans into production, to scale up.\"\u003C/p\u003E\r\n\u003Ch3\u003E\u003Cb\u003EKitchens in the Netherlands\u003C/b\u003E\u003C/h3\u003E\r\n\u003Cp\u003EMeanwhile, Surya's entrepreneurial spirit continues to run at full speed. Maybe there will be customised handles for his pans. Or durable ways to refurbish the pans after several years of usage. Or a similar concept for use with sustainable heat sources, for homes and professional kitchens in the Netherlands that will slowly have to move away from the use of natural gas.\u003C/p\u003E\r\n\u003Cp\u003EBut that is the future. Right now, only 15% of the world's population cooks electrically.
